Weekly Meals

Happy Friday!

Today is wedding day! I am so excited for today’s festivities and praying for the most perfect day! It was a little bit of a hectic week with wedding prep and festivities. I was off of work yesterday and today (hooray!) to get nails done, set-up the venue, rehearsal and rehearsal dinner and of course wedding day! So, I wanted to share with you the meals I made this week that were easy and simply delicious. Everything I made was quick to prepare, nutritious and so good. I have 3 different recipes that I used, and had one night of leftovers and last night was the rehearsal dinner, so I didn’t have to worry about preparing anything!

Sunday Night- Buffalo Chicken Spaghetti Squash Casserole

This meal took the longest to prepare, but I made it on Sunday, so I had the extra time. However, it made a TON, so I was able to take it for some lunches and eat it Wednesday night for a quick dinner. This was so, so good and I will definitely be making it again. My local farmer’s stand that I go to has started offering deals on their produce now since it is getting to be the end of the season, so 2 friends from my gym and I went in on a bushel of produce for only $18 each! We got SO.MUCH.STUFF. We got kale, apples, broccoli and spaghetti squash (reasoning behind this meal 🙂 ) So, I have been putting a lot of it to use this week for my meals.

Monday Night- Easy Chicken Stir Fry

This is one of those meals that I throw together when I have a bunch of vegetables in the refrigerator that I need to use up. It is SO easy and uses a ton of vegetables. All i do is saute the veggies and chicken in garlic, onion powder, red pepper flakes and a little soy sauce and there you have dinner in 10 minutes! This time I used carrots, red and green pepper, onion, zucchini and broccoli. I also served this with cauliflower rice!

Tuesday Night- Turkey Pumpkin Chilli

TJ’s never lets me down! This was a new recipe, and I couldn’t wait to try it. It did not disappoint! It wasn’t too “pumkin-y” which I was afraid of. It had a ton of flavor too it and was delicious! This was also on the leftover plan for Wednesday night because we had so much left over! This is probably the most perfect fall meal and will definitely be made again! On a side note, I let this cook in the crockpot on low for 6 hours, which is not what the recipe says to do, but it worked perfectly and was ready to be eaten when I got home from work!
