Happy Tuesday!
Hopefully you all enjoyed that burner of a workout yesterday! I will probably be putting that to use this weekend because they are calling for a good amount of snow! Now, it is still kind of far away, and a lot of times these “storms” they call for are a total bust, but I’m still hopeful! Given our mild winter thus far, I am looking forward to some snow. Not to mention, it is going to be Friday night into Saturday, so I don’t have to worry about missing work. Wins all around!
But, anyway, I am here because I made a delicious meal last night, and it needs to be shared with you! While it is a little time consuming, it is super easy and well worth your time. This fall, I got into experimenting with all different kinds of squash, and fell in love with acorn squash! I had never cooked, or eaten before, so I am glad I gave it a try.
Last night, I made a new recipe, and let’s just say it might be a weekly staple for the rest of the winter. It is so hearty and flavorful. Perfect for a freezing winter night.
Ingredients:
2 large acorn squash
1lb lean turkey sausage
1 medium apple (any kind)
1/2 cup yellow onion
1/2 cup diced celery
Fresh rosemary
Salt and pepper to taste
Directions:
- Cut the bottoms off of the acorn squash and cut in half. Pre-heat oven to 400 degrees.
- Drizzle the halved acorn squash with olive oil, salt and pepper and place on a cookie sheet. Bake for 30-40 minutes, or until squash becomes tender.
- Put a pan on medium heat and add sausage. Cook until no longer pink.
- Add veggies and apples and cook until soft.
- Remove squash from oven. Fill each half with sausage mixture and bake another 15 minutes.
