Turkey Sausage and Apple Stuffed Acorn Squash

Happy Tuesday!

Hopefully you all enjoyed that burner of a workout yesterday! I will probably be putting that to use this weekend because they are calling for a good amount of snow! Now, it is still kind of far away, and a lot of times these “storms” they call for are a total bust, but I’m still hopeful! Given our mild winter thus far, I am looking forward to some snow. Not to mention, it is going to be Friday night into Saturday, so I don’t have to worry about missing work. Wins all around!

But, anyway, I am here because I made a delicious meal last night, and it needs to be shared with you! While it is a little time consuming, it is super easy and well worth your time. This fall, I got into experimenting with all different kinds of squash, and fell in love with acorn squash! I had never cooked, or eaten before, so I am glad I gave it a try.

Last night, I made a new recipe, and let’s just say it might be a weekly staple for the rest of the winter. It is so hearty and flavorful. Perfect for a freezing winter night.

Ingredients:

2 large acorn squash

1lb lean turkey sausage

1 medium apple (any kind)

1/2 cup yellow onion

1/2 cup diced celery

Fresh rosemary

Salt and pepper to taste

Directions:

  1. Cut the bottoms off of the acorn squash and cut in half. Pre-heat oven to 400 degrees. 
  2. Drizzle the halved acorn squash with olive oil, salt and pepper and place on a cookie sheet. Bake for 30-40 minutes, or until squash becomes tender.
  3. Put a pan on medium heat and add sausage. Cook until no longer pink.
  4. Add veggies and apples and cook until soft.
  5. Remove squash from oven. Fill each half with sausage mixture and bake another 15 minutes.
