Happy Tuesday Friends!
Since starting my new job, I have been working later in the day, and sometimes later at night depending on what I have going on. So, dinner becomes interesting. I am always searching for quick, easy dinners to make when I get home, because I am usually starving by that time. While I am still getting used to a new schedule and routine, I have found a new go-to recipes to make my week nights easy and stress-free when it comes to dinner. I can come home, whip up a quick meal and still have to to relax and catch up on some shows, reading or coaching lacrosse. But, my favorite easy meal, is chicken stir-fry. While I have always been a fan of this meal, I have been making it more often now and adding in different vegetables each time to give it some variety.
Last night, I think I made my favorite so far! It is simple, but full of flavor, and was completely satisfying. Whenever I hear people say that they don’t have time to cook healthy meals, or that healthy meals are boring, I always give them this! Probably the easiest and most delicious, nutritious dinner ever 🙂
- Chicken
- Diced zucchini
- Chopped celery
- Diced carrots
- Diced red, green and orange pepper
- Edamame
- Southwest corn
- Onion
- Garlic
- Brown Rice
- Soy Sauce
- Red Pepper Flakes
Basically, I sauteed the chicken, then added in all the veggies and spices. Cooked up rice on the side and boom. Dinner! Easy as that!
Whenever I know I am short on time for preparing dinner, this is my go to. I can change it up depending on what I have on hand, so it never gets old.
