Blizzard Weekend Eats

Gooooood Morning! Is everyone shoveled out yet?? I am, sort of. I can get out, but my driveway is still a mess! I feel like it will never go away! I think I am good for snow this year…

Anyway, being stuck inside all weekend means only one thing…making lots of yummy food! While I planned to make more, shoveling got in my way and by the time I was done, I just didn’t feel like doing anything, including cooking. But, I did make some yummy meals and snacks and enjoyed them all.

Friday night, I went to happy hour before the snow began, and when I got home, made a homemade, gluten free pizza. When I was grocery shopping, I happened to notice a mix from Bob’s Red Mill that looked delicious! It is gluten-free, and so simple to make. You just add and egg and olive oil to the mix, let it rise for 20 minutes, bake, load it with toppings and then bake until finished! It turned out great, and I froze half of the mix so I have more for another time!

Obviously, you can’t be home in a blizzard and not have a comforting dessert! So, after my pizza, I made my first Paleo Mug Cake. I see these all the time  and just have never made one. So, I put 1 tablespoon of both coconut flour and almond four, 1 egg, 2 tablespoons of maple syrup and lots of Enjoy Life chocolate chips! Put it in the microwave for 1 mintue and 30 seconds and it was done! So yummy and gooey!

On Saturday, I woke up and made a batch of these coffee protein muffins! I had high expectations, but unfortunately, I wasn’t a fan. I think next time, I will use less protein powder and more coffee. They kind of just tasted like the protein powder. But I will definitely try them again!

So instead, I snack on pumpkin puffins! Saw them on clearance at Target and thought they’d make the perfect snow day snack, and they did!

For dinner, I made Salsa Chicken Tacos! So easy! Just made a batch of my crockpot chicken salsa and put it on corn tortillas with spinach, avocado and sriracha. Perfect, easy, comforting dinner.

Andddd for the grand finale round-up….Sunday Brunch! I LOVE breakfast food and brunch, so i made it a point to make up myself some delicious brunch meals while being stuck at home. This one consisted of scrambled eggs with peppers, spinach and roasted brussel sprouts, avocado toast on Ezekiel bread and bacon! It was so, so yummy.
